Welcome to Picco! We want your dining experience to be a
great one. All of our menu items are made in house and are cooked to
order. We are confident that freshly prepared foods are the best way to
ensure a delicious meal. We begin with the highest quality ingredients
- extra virgin olive oil, Parmigiano Reggiano & Fontina d’Aosta
cheeses from Italy, fresh vegetables and meats, King Arthur Flour,
imported Italian tomatoes, and pounds of Scharffen Berger dark
chocolate, Vietnamese cinnamon, and fresh fruit. We make our own soup
stocks, sauces, sausage, meatballs, salad dressings, ice cream, and
baked desserts- it’s all homemade – right here.
A quick word about our pizza dough – the dough used in
our pizzas and calzones today was started two days ago. We use a cold
fermentation process starting with cold flour, yeast and water. The
dough is mixed and kneaded with salt and a little extra virgin olive
oil and refrigerated for two days until it’s time to use it. This slow,
cold rising and fermentation process allows the dough to develop a
wonderful structure, but most importantly it acquires a very rich,
toasty flavor.
We choose wines and beers to pair well with our food and
make an effort to support wine producers like Alois Lageder
that adhere to organic and biodynamic farming methods.
